Sally, my mom, liked to cook from a recipe and keep it simple. However, this was one of the few things she made from memory. This is still one of my favorite summer sides that she used to serve on a hot August evening to pair with whatever my dad was cooking on the grill. When my extended family visits NH, I make this, and it’s “just like Aunt Sally’s”. Simple and bright.
- 2 cups chopped tomatoes
- 1 small diced onion
- 1/2 green pepper, diced (“just some for color”, she used to say)
- 1/4 tsp salt
- 1 Tbls sugar
- 1/4 cup apple cider vinegar
Mix all ingredients, except for the vinegar, together in a bowl and let them stand for at least 10 minutes to draw out the tomato’s juices. Add vinegar just before serving and stir.
