This recipe is from one of our kind CSA members! She says that this is her grandmother’s recipe from Spain and it can be made in the summer months, frozen, and reheated in the winter to transport you back to August. Enjoy!
Ingredients:
- 4-5 medium zucchini, sliced (or summer squash works here too!)
- 2 wedges of Laughing Cow Cheese, Original flavor (or garlic and herb)
- 1 small onion or 1/4 of a large onion
- 1-2 cloves of garlic, smashed
- 4 cups chicken stock
- Salt and Pepper
Place sliced zucchini, onion, and garlic into a pot with chicken stock. Add 2 tsp salt and 1/2 tsp of pepper. Bring to a boil, then simmer until the veggies are cooked (5-8 minutes). Add the cheese wedges. Blend with an immersion blender until smooth. Taste for seasoning and add more salt and pepper as needed.
