Moroccan Lemonade

We almost got stuck in Morocco at the start of the pandemic, which may not have been too bad, as the food is delicious! They use fresh herbs in so many recipes. This is a refreshing drink that I enjoyed in Marrakesh on a lazy afternoon looking out over a busy market square.

  • 3 lemons, juiced
  • 1/4 cup simple syrup (1 cup sugar heated and dissolved in 1 cup water, then cooled)
  • 2 sprigs fresh mint, remove leaves and discard stems
  • seltzer

Add lemon juice, 1/2 mint leaves, and simple syrup to a shaker (or a glass for stirring if you don’t have a shaker). Shake vigorously for 10 seconds, then pour over ice in a glass. Top with seltzer to the rim and add the remaining mint leaves. Give the drink a quick stir to incorporate and enjoy!
