- 5 oz. arugula, washed and dried
- Block of parmesan cheese
- 1/4 cup olive oil
- 11 Tbsp white wine or champagne vinegar
- 1 Tbsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp ground pepper
Make the salad dressing by whisking vinegar, mustard, salt, and pepper well to combine. Next, whisk in olive oil and set aside. Add arugula to a large salad bowl. Using a vegetable peeler, shave 7-10 large slices of parmesan cheese into the bowl (or more if you like cheese!). Add dressing, a little at a time and toss. Continue to add dressing as you prefer.
